Goat Cheese Balsamic Chicken

Skinless Boneless Chicken Breasts (pounded thin)

Bread Crumbs

Egg

Goat Cheese

Cherry Tomatoes

Basil

Garlic

Balsamic Glaze


1. Cut chicken breasts in half lengthwise and pound thin. Whisk eggs in small bowl and coat chicken in egg then cover in bread crumbs. Heat oil in pan and cook chicken on both sides until cooked through.

2. Add diced tomatoes, minced garlic, and chopped basil to a bowl and mix.  

3. Plate chicken, coat with goat cheese, and top with tomato mix. 

4. Top with Balsamic.
